Ingredients for Aashure
For 15 bowls ingredients:
Two glasses of wheat special for Aashure
- 2 cups cooked peas
- 2 cups cooked white beans
- 150 grams of dried apricots
- 150 grams of dried figs
- 150 grams of dried raisins
- Half a glass of hazelnuts
- 4 liters of hot water (to add to food in case of dehydration)
- 1 tablespoon clove
- 1 cup boiled water (for boiling cloves)
- 1.5 liters of warm milk
- 3 glasses of sugar
- Ingredients for decoration
- Pomegranate seeds
How to prepare Aashure
First, cook the peas and white beans separately
Wash the wheat and put it into a pot, add boiling water to the wheat and boil it for 10 minutes.
Then we drain
And we repeat this again
Then pour 2 liters of water on the wheat and cook for 50 minutes
If you want, you can boil and drain the wheat twice the night before, then keep it in warm water until morning until the wheat is soft.
(With this method, 15 to 20 minutes of cooking time is enough)
Chop the apricots and dried figs into small pieces and put them all into a bowl with the raisins and soak them in warm water.
When the water of wheat decreases, we add boiling water to the pot (it’s water should not be too low)
After about 50 minutes of cooking and softening the wheat, add the cooked peas, beans, figs, apricots, and raisins that have been drained and boil for 15 minutes.
Pour the cloves and water into a small pot and boil for 10 minutes
In the meantime, we add boiled water for the wheat that has lost its water again
Finally we add boiled clove water hazelnuts, warm milk, sugar and cook all for 15-20 minutes until it’s completely settled.
Pour the prepared food into the desired bowls and wait for the soup to cool.
We decorate Aashure with chopped walnuts and hazelnuts, pistachios, pomegranate seeds,and cinnamon
