Karakush Tatlisi


  • 1 egg
  • Flour in the required amount (about 3 cups)
  • Sugar: 1 tablespoon
  • Salt: 1 tablespoon
  • Baking powder: 1 tablespoon
  • Lemon juice:1 tablespoon
  • Oil:1/4 glass
  • Boiling water:1/2 glass
  • Vanilla: in the required amount
  • Cornstarch: in the required amount

Ingredients for the syrup:

  • Sugar: 2 glass
  • Water: Half a glass
  • Saffron: A little
  • Lemon juice:1 tablespoon


Mix eggs, vanilla, salt, sugar, boiling water, oil, lemon juice, flour and baking powder well. add the flour little by little until a soft dough is obtained and does not stick to your hands. excessive use of flour causes the dough to be in poor quality and heavy and it won’t be crispy. Cover it for 20 minutes so that the dough rests.

Let’s make the syrup

Add sugar and water to a dipper, put on heat and mix well. until it dissolves, then add saffron and lemon juice and let it boil to have a little consistency. your syrup should not be too dilute because it will soften your sweet. The taste of this sweet is to be crispy (this amount of syrup is too much for using for one time. You can use half of the ingredients).

Now go for the dough

Divide the dough into two parts. Open it in a rectangular shape with a rolling pin (use cornstarch to open the dough. Whenever the starch goes into the crumbs of the dough if you want to open the dough again, add the starch again.) The dough should be thin then cut the sides with a cutter so that it becomes rectangular.

Then roll the dough widthwise. Grease the end of the dough with an oil brush to stick them together. Then cut the dough to a size (approximately 1.5 centimeter) with a knife. Smooth out each part. And move the rolling pin only from the length until it is smooth. Do not put any pressure on the rolling pin at all! Because the layers would stick together (You have to use starch to open all the parts again).

Continue to fry in hot and abundant oil .While frying, the layers separate and take a beautiful shape

In the last step, pour a spoonful of syrup on all the sweets and it is ready.

Do not spill all the syrup that would make it too sweet.
